Our Framework

Our batch cooking framework makes it easy to cook multiple meals using the same star ingredient. Having your base ingredient prepared makes it easy to create the simple recipes included in the “star ingredient section.”

For example, a batch of chick peas creates a pasta dinner, hummus and a chick pea salad as well as freezer options.

The Allora program makes meal time less stressful while supporting your health and nutritional needs.

Batch Cooking Black Beans

  • Choose your recipes

  • Calculate the amount of beans you will need total.

  • Use conversion chart if using dried beans.

  • Place in pot so beans are covered with water. Add 1 1/2 tsp salt, 1/2 tsp baking soda and a bay leaf.

  • Add water as needed to keep beans covered.

  • Bring to boil then simmer until soft.

  • Dried beans need to cook for 2-3 hours before using in recipes

  • Beans cooked in an Insta pot require only 30-40 min.

  • Soaking overnight is another option after which the beans can be used directly into the recipe.

Coversions

One pound of dried beans equal to 4 15 ounce cans of beans.

One pound of dry beans = 6-7 cups of cooked beans

1 15 oz can of beans = 1 1/2 cups cooked beans

1 cup of dry beans = 3 cups of cooked beans

Batch Cooking Brown Rice

Conversions

1 cup dry rice = 3 cups cooked rice.

1 cup white rice, cook in 1 1/2 cups water on the stove.

1 cup brown rice, cook in 2 cups of water on the stove.

If cooking in rice cooker follow those instructions for rice and water.

  • Choose your recipes.

  • Add total amount of rice needed.

  • Use conversion chart for dried rice to cooked rice.

  • Cook using rice cooker or stovetop, can also cook in oven and microwave.

  • Refrigerate extra rice if making meals at different times.

  • Rice can be frozen.

Batch Cooking Lentils

Lentils are a bit more fragile so we will approach batch cooking differently.

  • When making the main dish, you could double the lentils/quinoa/broth measurements. Once cooked, remove half of this mixture, cool and freeze. Continue with the recipe with the other half of the lentil mixture. This saves time for next time you make the recipe.

  • Red lentils become soft very quickly. The best way to batch cook the soup is to double the full recipe. Freeze half of the fully cooked soup for another day. It freezes perfectly.

  • The green lentils for the salad can easily be batch cooked. This makes it easy to make a larger portion of salad or save the extra lentils in the refrigerator to add to a green salad later in the week. Another option is to freeze the additional lentils before making into the salad.

Conversions

1 cup of dry lentils = 2 1/2 cups cooked lentils.

1 can of cooked lentils = 2 cups

1 cup of lentils (green/brown) cooks in 3 cups of water.
